Introduction
During SAIL Amsterdam, we were commissioned by DAMEN Shiprepair to create one of the most spectacular dinners ever produced: Dinner by Dock.
A once-in-a-lifetime experience, served 10 meters below sea level in a dry dock, beneath a 100-meter-long ship. While the churning IJ river and passing tall ships formed the backdrop behind the lock gates, we hosted a total of 1,800 guests over three days, split into two shifts per day.
For DAMEN, a proud supporting partner of SAIL, this event became the ultimate showcase of maritime craftsmanship, innovation, and hospitality. BAUT not only handled the concept and culinary execution but also sold tickets through both corporate and private networks, giving a wide audience access to this unique experience. The menu was built entirely around the richness of the Dutch seabed, as an ode to shipbuilding, the sea, and the nautical world that SAIL brings together.

The Result
Dinner by Dock was an unparalleled evening: raw, impressive, and enchanting all at once.
The monumental scale of the ship above the guests, the echo of the dock, and the magic of the passing tall ships creating silhouettes—everything worked together to create a surreal setting that felt like a piece of maritime theater.
Our menu, consisting exclusively of Dutch fish, shellfish, and crustaceans, translated the sea to the plate: pure, powerful, and rooted in the origins of our waters. The service was seamless, despite the logistical challenges of an industrial environment ten meters below sea level. The reactions were overwhelming: guests left the dock feeling as though they had experienced something that would never be repeated.
DAMEN received exactly what they aimed for: a hospitality icon that brought the power of Dutch maritime craftsmanship to life. With Dinner by Dock, BAUT once again confirmed its ability to fuse gastronomy, location, and storytelling into an experience that will be talked about for years to come.
An event that wasn't just special, but became legendary, tasted by the crème de la crème of the nautical world. From the Minister of Economic Affairs and the highest-ranking admirals of the Navy to the top executives of the port and the city of Amsterdam.
